Recipe: Simple Stuffed Celery

You have no idea how much I wanted to write "Simple Stuffed Selery" but search engines and all that.

Anyway, this isn't much of a recipe, but then I'm not much of a cook. I did a quick search on "stuffed celery" after making mine, and found there are many variations, pretty much all of them more complex than this one. But hey, whatever works.

simple-stuffed-celery-ingredientsMost folks know I'm not a fan of cheese (aka "milk gone bad") other than cottage cheese which doesn't stink and is chock-full of protein. Cream cheese hardly even seems like cheese, which is one downside of this recipe. It's really a processed food. But if it helps a non-veggie eater get some celery, then that's not so bad. And if it's a substitute for other crunchy, salty snacks (like potato chips) then it's pretty darn good.

Just three ingredients here: celery, cream cheese, and paprika. I think the paprika mostly just makes it look nicer; I barely taste it. Feel free to skip it, or add something fancier.

One final note: while the celery has negligible calories, the cream cheese definitely has some. It's still a big improvement over most snack chips, but something to keep in mind.
