You have no idea how much I wanted to write "Simple Stuffed Selery" but search engines and all that.
Anyway, this isn't much of a recipe, but then I'm not much of a cook. I did a quick search on "stuffed celery" after making mine, and found there are many variations, pretty much all of them more complex than this one. But hey, whatever works.
Most folks know I'm not a fan of cheese (aka "milk gone bad") other than cottage cheese which doesn't stink and is chock-full of protein. Cream cheese hardly even seems like cheese, which is one downside of this recipe. It's really a processed food. But if it helps a non-veggie eater get some celery, then that's not so bad. And if it's a substitute for other crunchy, salty snacks (like potato chips) then it's pretty darn good.
Just three ingredients here: celery, cream cheese, and paprika. I think the paprika mostly just makes it look nicer; I barely taste it. Feel free to skip it, or add something fancier.
One final note: while the celery has negligible calories, the cream cheese definitely has some. It's still a big improvement over most snack chips, but something to keep in mind.
